Apricot Salad
Apricot Salad is an moderately easy dinner. Made with 1 (20 oz.) can pineapple, 1 (6 oz.) apricot jell-o, 2 c. boiling water, 2 c. cold water and 2 bananas, chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Drain pineapple, keep juice.
Combine boiling water and Jell-O until dissolved.
Add cold water, bananas, marshmallows and pineapple.
Mix well and chill until set.
Add enough water to pineapple juice to make 1 cup.
Combine liquid, sugar, flour, butter and eggs; cook until thick.
Add cream cheese and continue stirring until cheese is melted; let cool and spread over Jell-O mix.
Top with Cool Whip.
