Apricot Pie
Apricot Pie is an moderately easy dinner. Made with 4 c. sliced apricots (fresh or frozen), 1 tbsp. lemon juice, 1 c. sugar, 1/4 c. flour and 1/8 tsp. nutmeg (optional), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In large bowl, sprinkle apricots with lemon juice.
Combine sugar, flour and nutmeg.
Add sugar mixture to apricots; toss to coat fruit.
Fill a pastry-lined 9-inch pie plate with apricot mixture; dot with butter.
Put on top crust.
Seal and flute edge. Bake at 375° for 20 minutes.
Check to see if crust is browning. If brown, cover edges with foil and bake at 375° for another 25 minutes until golden brown.
Cool on rack before serving.
