Apricot Mousse
Apricot Mousse is an moderately easy dessert you can prepare in about 1 hour 14 minutes. Made with (3 oz.) pkg. apricot gelatin, c. hot water, c. cold water, . whipped topping and mandarin oranges, drained, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Using a large mixing bowl, dissolve the gelatin in hot water. Add the cold water.
Refrigerate for 1 1/2 hours or until the gelatin becomes syrupy.
Whip the gelatin with an electric mixer at high speed until it becomes foamy and triples in size, filling the large mixing bowl.
At the lowest speed or by hand, gently fold in 9 ounces of whipped topping.
(Reserve 3 ounces for garnish).
Gently fold the orange segments into the mixture. Transfer to a 3-quart serving bowl.
Garnish with the remaining whipped topping and refrigerate for 24 hours.
