Apricot Gelatin
Apricot Gelatin is an moderately easy dinner. Made with 2 boxes apricot jell-o, 2 c. hot water, 1 c. hot pear juice (if needed to make 1 c., add some mandarin orange juice), pears, drained and chopped and 1 (8 oz.) pkg. cream cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix Jell-O in hot water and hot pear juice until dissolved. Pour over softened cream cheese; beat with mixer until creamed. Stick in freezer until it starts to jell (30 minutes or so). After jelled, add chopped pears and Mandarin oranges.
Fold in Cool Whip.
