Apricot Delight
Apricot Delight is an moderately easy dinner. Made with 1 angel food cake, 1 (46 oz.) can apricot nectar, 1 1/2 c. sugar, 3 tsp. lemon juice and 7 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Tear cake into pieces and put in pan or large bowl.
Combine apricot nectar, sugar, lemon juice and cornstarch and cook until thick.
Let cool slightly, then pour over cake pieces.
Cool completely.
Cover with Dream Whip topping and sprinkle with coconut.
Keep refrigerated.
