Apricot Bread
Apricot Bread is an impressive baked good you can prepare in about 1 hour 42 minutes. Made with c. snipped dried apricots, c. warm water, c. sugar, . butter or margarine, softened and egg, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Soak apricots in warm water for 30 minutes.
Meanwhile, in a mixing bowl, cream the sugar, butter and egg.
Stir in orange juice.
Combine flour, baking powder, baking soda and salt.
Stir into creamed mixture just until combined.
Drain apricots well; add to batter with nuts.
Pour into greased 9 x 5 x 3-inch loaf pan.
Bake at 350Β° for 55 minutes or until bread tests done.
Cool 10 minutes in pan before removing to a wire rack.
Yields 1 loaf.
