Beat softened butter with sugar.

Mix in soda, flour, oats and salt.

Brush an 8 x 12-inch tin with melted butter.

Spread half the mixture over the bottom.

Chop the apricots.

Mix with lemon rind.

Spread over the crumb mixture and cover with remaining mixture.

Cook in moderate oven (350Β°) for 25 to 30 minutes.

Cut into bars and leave to cool in tin.

Sprinkle sugar over. Delicious when topped with ice cream or cream.
