Apricot Bars
Apricot Bars is an moderately easy dinner. Made with 2/3 c. apricots, 1/2 c. butter, 1/4 c. sugar, 1 c. flour and 1/3 c. flour, sifted, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Rinse apricots.
Cover with water; boil for 10 minutes.
Let cool.
Chop cooled apricots.
Mix into crumbs with a pastry blender the butter, sugar and 1 cup flour.
Press crumbs into a square 8 x 8-inch baking dish.
Bake for 25 minutes at 350Β°.
With a whisk, beat eggs lightly.
Add brown sugar, 1/3 cup flour, baking powder, salt and vanilla.
Stir until smooth.
Add chopped apricots. Spread apricot mixture over just out of the oven hot baked layer; bake another 30 minutes.
