Apricot Bars
Apricot Bars is an moderately easy dinner. Made with 3/4 c. margarine or butter, 1 c. sugar, 1 egg, 2 c. all-purpose flour and 1/4 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a large mixing bowl, cream butter and sugar.
Add egg; mix well.
In a separate bowl, combine flour and baking powder. Gradually add to butter mixture.
Add coconut, walnuts and vanilla extract.
Mix thoroughly.
Press 2/3 of dough into a greased 13 x 9 x 2-inch baking pan.
Spread with preserves.
Crumble remaining dough over preserves.
Bake at 350Β° for 35 minutes or until golden brown.
Cool in pan on wire rack.
