Apple Squares - Passover
Apple Squares - Passover is an moderately easy dinner. Made with 1 c. sugar, 1/2 c. peanut oil, 1 c. matzo meal, 3 eggs, separated and juice and grated rind of 1 lemon, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Mix dry ingredients.
Add yolks, oil and lemon juice and rind. Fold in stiffly beaten egg whites.
Spread 1/2 of the batter in the pan.
Cover with apple slices.
Sprinkle with cinnamon-sugar mixture.
Cover with rest of the batter.
(Optional: You may sprinkle with more cinnamon-sugar mixture at this time.)
Bake in a 375Β° oven for 45 minutes in an 8-inch greased square pan.
Cool and cut into squares.
