Apple Salad
Apple Salad is an moderately easy dinner. Made with 2 boxes lemon jello, 16 large marshmallows, cut up, 2 c. hot water, 1 c. cold water and 2 large apples, diced, unpeeled, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt jello in hot water.
Add marshmallows.
Add cold water and let partially set.
Fold in pineapple and nuts.
Chill until firm.
Beat together 3/4 cup sugar, 2 eggs and juice of 1 lemon. Cook to full boil, stirring continuously.
Watch closely.
Let cool and add 3/4 container Cool Whip.
Spread on cooled jello and slice.
Great for Thanksgiving with turkey.
