Apple Ring Pickles
Apple Ring Pickles is an moderately easy dinner. Made with 2 gal. large cucumber rings (approximately 32), 2 c. pickling lime, 8 1/2 qt. water, 1 c. vinegar and 1/2 bottle red food coloring, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel and take out seeds of cucumber rings.
Mix pickling lime and 8 1/2 quarts of water together.
Pour over cucumbers and let stand 24 hours.
Drain off liquid; wash rings.
Soak in plain water 3 hours; drain.
Simmer rings in 1 cup vinegar, red food coloring, alum and water to cover for about 2 hours.
Drain and throw away liquid.
