Apple-Cheddar Muffins
Apple-Cheddar Muffins is an moderately easy dinner. Made with 1 3/4 c. all-purpose flour, 1/2 lb. apples, cored, pared and finely chopped, 1/2 c. rye flour, 1/4 c. cheddar cheese, shredded and 1/4 c. sugar, this recipe delivers authentic, satisfying flavors. Preheat oven to 375Β°.
Combine first 9 ingredients in a medium mixing bowl.
Stir to combine and set aside.
In blender, combine remaining ingredients and process until smooth.
Pour into dry ingredients and stir until moistened (do not beat or overmix). Prepare muffin pan.
Fill each cup with an equal amount of batter (each will be about 3/4 full).
Bake in middle of center oven rack for 20 minutes.
Cool and serve.
Great for breakfast or as part of a light lunch.
