Apple Butter
Apple Butter is an easy dinner. Made with 4 lb. apples, cut up, 7 c. sugar, 1/2 bottle pectin (certo) and 1 tsp. cinnamon (or more), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Remove stems and ends of fully ripe apples; cut in small pieces.
If sweet apples, add 2 tablespoons lemon juice.
Add 1 1/2 cups water.
Bring to a boil and simmer, covered, for 10 minutes.
Crush with masher and simmer, covered, 5 minutes longer. Place in a large sieve.
Use fruit pulp for butter.
Measure 5 cups into a very large saucepan; add sugar and mix well.
Place over high heat; bring to a rolling boil.
Boil for 1 minute, stirring constantly.
Remove from heat.
Immediately stir in Certo; skim off foam with a metal spoon.
Stir and skim for 5 minutes to cool slightly to prevent floating fruit.
Ladle into sterilized glass jars.
Cover at once with 1/8-inch hot paraffin.
