Mix bicarbonate of soda with boiling water and add to melted butter. This will froth up, so make sure saucepan is large enough.

Mix dry ingredients and add to saucepan.

Mix well to make a firm consistency. Drop teaspoonfuls onto well-greased baking trays, leaving space to spread.

Bake in a moderate oven for 15 to 20 minutes until golden brown.

Loosen on trays while still hot and allow to cool on trays, then transfer to wire racks and allow to cool.
