Amy's Chicken-Rice Casserole
Amy'S Chicken-Rice Casserole is an moderately easy dinner. Made with 1 large or 2 small pkg. uncle ben's wild rice (original), 1 chicken, boiled, deboned and cut up or 1 turkey breast, baked, 1 large bag frozen frenched beans, cooked al dente and lightly salted, 2 cans sliced water chestnuts, drained and 1 jar cut up pimento, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Prepare rice as directed.
In large (3-quart) casserole, layer as listed through pimentos.
(Amy is from New Mexico and adds 1 can green chili peppers, too.)
May be made ahead this far (up to one day).
