Amish Lemon Pie
Amish Lemon Pie is an moderately easy dinner. Made with 2 tbsp. margarine, softened, 1 c. sugar, 3 eggs, separated, 3 tbsp. flour and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cream margarine and sugar.
Add egg yolks and beat well.
Add flour, salt and lemon juice, rind and milk.
Blend well.
Beat egg whites until stiff; fold into lemon mixture.
Pour into pie shell. Bake at 350Β° for 35 minutes.
Cool and top with Cool Whip. Serves 8.
