Ambrosia Salad
Ambrosia Salad is an easy dinner. Made with 1 (15 1/4 oz.) can pineapple chunks, 3 medium oranges, peeled and sectioned, 1/2 c. maraschino cherries, halved and drained, 1/2 c. flaked or shredded coconut and fresh mint leaves, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Drain pineapple chunks, reserving 1/4 cup of syrup.
Combine pineapple chunks, reserved pineapple syrup or orange sections and maraschino cherries.
Cover; chill thoroughly.
Just before serving fold in coconut.
Garnish with fresh mint leaves, if desired. Makes 6 servings.
