Ambrosia Mold
Ambrosia Mold is an moderately easy dinner. Made with 8 oz. can crushed pineapple in juice (undrained), 2 c. boiling water, 8 serving size pkg. or 2 (4 oz. serving size) pkg. orange flavored gelatin, 1 3/4 c. frozen nondairy whipped topping, thawed and 11 oz. mandarin orange segments, drained, this recipe delivers authentic, satisfying flavors. Drain pineapple, reserving juice.
Add water to juice to measure 1 cup.
Stir boiling water into gelatin in large bowl 2 minutes or until completely dissolved.
Stir in measured liquid. Refrigerate 1 1/4 hours, until slightly thickened (consistency of egg whites).
Stir in topping with wire whisk until smooth. Refrigerate 10 minutes or until mixture will mound.
Stir in pineapple, orange, marshmallows and coconut.
