Ambrosia Mold
Ambrosia Mold is an moderately easy dinner. Made with 1 (8 oz.) can crushed pineapple (undrained), 2 c. boiling water, 1 large pkg. or 2 small pkg. jell-o (orange flavor), 1 3/4 c. thawed cool whip and 1 (11 oz.) can mandarin orange segments, drained, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Drain pineapple, reserving liquid.
Add cold water to liquid to measure 1 cup.
Stir boiling water into gelatin in large bowl for 2 minutes or until completely dissolved.
Stir in measured liquid.
Refrigerate 1 1/4 hours or until slightly thickened. Stir in Cool Whip with wire whisk until smooth.
Refrigerate 10 minutes.
Stir in oranges, pineapple, marshmallows and coconut. Spoon into a 6-cup mold.
Refrigerate 4 hours or until firm. Unmold on bed of lettuce.
Makes 10 servings.
