Amaretto Compote
Amaretto Compote is an moderately easy dinner. Made with 2 c. water, 1/2 c. dried apricots, 1 c. amaretto, 1 tsp. shredded lemon peel and 1 c. dried, pitted prunes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In saucepan combine water, prunes and apricots.
Bring to a boil.
Remove from heat and let stand for 15 minutes.
Drain, reserving 1/2 cup liquid.
In same pan, combine the reserved liquid, pears, Amaretto, sugar and lemon peel.
Bring to boiling, reduce heat.
Cover and simmer for 8 to 10 minutes or until pears are crisp-tender.
Stir in prunes and apricots; heat through. Spoon into 4 individual serving dishes.
Serve warm.
