Almond Roca
Almond Roca is an easy dinner. Made with 1 1/2 c. toasted almonds, chopped, 2 1/3 c. almonds (not toasted), chopped, 1 lb. butter, 2 c. sugar and 1 (12 oz.) pkg. chocolate chips, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a heavy saucepan, melt butter.
Add sugar and chopped, untoasted almonds.
Stir mixture occasionally with a wooden spoon over medium to medium-low heat.
Cook until candy thermometer reads 280Β°.
Quickly remove from heat.
Pour into ungreased jelly roll pan and spread out evenly with knife.
While still hot, sprinkle chocolate chips, wait a bit and spread when melted. Sprinkle toasted almonds over top.
Let cool several hours.
Break into small pieces.
