Almond Potato Puffs
Almond Potato Puffs is an moderately easy dinner. Made with 1/4 c. water, 2 tbsp. (1/4 stick) butter, 3 tbsp. all-purpose flour, 1 egg and 1 1/2 c. cooked, mashed or riced potatoes, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Combine the water and butter in small saucepan and bring to boil over high heat.
Remove from heat; add flour, all at once, and beat until smooth.
Add egg, blending thoroughly.
Let cool. Add potatoes to flour-egg mixture and blend well.
Season to taste with salt, pepper and nutmeg.
Flour hands lightly, shape mixture into tablespoon-size balls.
Roll balls in chopped nuts.
Pour oil into a deep fryer or large saucepan and heat to 375Β°.
Fry balls in batches until golden, about 5 minutes.
Drain on paper towels. Serve hot.
