Almond Popcorn
Almond Popcorn is an moderately easy dinner. Made with 3 qts. popped dry corn, 1 c. sugar or fructose, 1/2 c. butter, 1/4 c. light corn syrup and 1/4 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Mix nuts and popcorn in a large bowl; set aside.
In a saucepan, combine sugar (or fructose), butter, corn syrup, and baking soda.
Bring to a boil over medium heat; boil and stir until mixture is golden, about 2 minutes.
Remove from heat; stir in extract.
Pour over nut and popcorn mixture, and toss to coat. Cool slightly; break apart while warm.
Yield: 3 quarts.
