7-Layer Casserole
7-Layer Casserole is an moderately easy dinner. Made with 1 c. uncooked rice, 1 c. canned whole kernel corn, drained; sprinkled with salt and pepper, 1 can tomato sauce and 1/2 can water, 1/2 c. finely chopped onion and 1/2 c. finely chopped green pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Place rice, corn, tomato sauce and water in layers in a 2 quart baking dish with tight fitting lid.
Pour over all onion, pepper, ground beef, salt and pepper.
Pour second can of tomato sauce and 1/4 can over all. Put 4 strips of bacon to cover meat.
Preheated oven for 1 hour, covered.
Uncover and bake about 30 minutes longer until bacon is crisp.
Double for larger amount.
