6 Week Pickles
6 Week Pickles is an moderately easy dinner. Made with cucumbers (small), bell peppers, banana peppers (sweet), 1 tbsp. plain pickling salt and 1 tbsp. pickling spices, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
You can use cucumbers, bell peppers or sweet banana peppers. Sweet banana is real good or you can mix them.
Wash and slice them.
Fill a gallon jug full.
Shake them down.
Put pickling salt, pickling spices and alum tied up in a cloth.
Put in jug and fill with vinegar and seal.
Count 6 weeks and write the date on lid.
When ready, drain off vinegar and fill with water and drain off twice.
Pour out in pan and add sugar and let stand 3 or 4 hours.
Then fill jars with the pickles; cover with syrup and seal.
