2 Pineapple Pies
2 Pineapple Pies is an moderately easy dinner. Made with 5 eggs, 2 c. sugar, 4 tbsp. butter, 1/4 c. water and 1 (8 oz.) can crushed pineapple, drained, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Carefully separate eggs.
Place whites in deep narrow bowl. Mix flour with sugar.
Cut up butter and add to sugar along with pineapple and egg yolks.
Stir while cooking to thick stage. Remove from heat and add vanilla.
Add 1 teaspoon warm water to egg whites.
Beat stiff and add 5 teaspoons sugar.
Pour pineapple mixture in 2 cooked pie shells.
Add egg whites and bake until brown.
