Zucchini Lasagna
Zucchini Lasagna is an moderately easy dinner. Made with 6 c. sliced zucchini, 1/2 lb. ground beef, 1 clove garlic, chopped, 1 (8 oz.) can tomato sauce and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook zucchini in boiling salt water for 5 minutes.
Cook beef and garlic, stir in spices and sauce.
Mix Ricotta, egg and parsley.
Place 1/2 zucchini in greased 8-inch square baking pan. Sprinkle with bread crumbs.
Spread 1/2 of Ricotta, 1/2 of beef mixture and 1/2 of Mozzarella.
Repeat.
Bake at 350Β° for 25 to 30 minutes.
Yields 5 to 6 servings.
