Upplandskubb is a Swedish steamed rye loaf with a dense cylindrical crumb, mild sweetness from syrup, and deep grain flavor, sliced thin for butter, cheese, or lingonberry jam.

Bloom the yeast in warm milk or water with a spoonful of syrup until active.
Mix in rye flour, bread flour, remaining syrup, melted butter, salt, and cracked rye to make a sticky dense dough.
Pack the dough into a buttered cylindrical mold or tall tin, cover, and let it rise until puffy.
Steam the sealed mold gently until the loaf is firm and cooked through to the center.
Cool completely before slicing thinly and serving with butter and lingonberry jam.
