Uncooked Relish
Uncooked Relish is an moderately easy dinner. Made with 1 pt. sweet red pepper, chopped, 1 qt. green pepper, chopped, 1 qt. cabbage, chopped, 2 tsp. celery seed and 4 c. sugar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Put each vegetable through food chopper using coarse blade. Drain off juice; discard.
Measure each vegetable after chopped. Mix vegetables with salt; let set overnight.
Next morning, drain off as much liquid as possible.
Add spices, sugar and vinegar to vegetables; mix well and pack in jars to within 1/2 inch of top. Put on cap; screw firmly.
Process in boiling water for 15 minutes.
