Tomato Gravy
Tomato Gravy is an moderately easy dinner. Made with 1/4 c. onion, chopped (optional), 3 tbsp. bacon drippings, 1 tbsp. flour, 3 or 4 fresh tomatoes, peeled and chopped or 1 can tomatoes and 1 c. water, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Saute onion in bacon fat.
Add flour and brown.
Add tomatoes and their juices.
Stir as gravy thickens.
Add water, a little at a time, and cook longer until gravy is of desired consistency. Add salt and pepper to taste.
Serve over rice or biscuits.
This gravy is also good as a casserole sauce.
