Texas Caviar
Texas Caviar is an moderately easy dinner. Made with 1/2 lb. black-eyed peas, 1 c. diced green pepper, 1/4 c. diced pimientos, 1 c. diced onions and 1/2 c. finely chopped green onions, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Soak peas in cold water to cover overnight.
Drain and rinse. Cover with fresh water and bring to boil.
Reduce heat; cover and simmer 1 hour or longer until tender.
Do not overcook.
Drain, rinse and place drained peas in a large bowl.
Add green peppers, pimientos, onions, garlic, chiles and Italian dressing.
Add salt and pepper to taste.
Makes 4 cups.
