Potato Crust Quiche
Potato Crust Quiche is an moderately easy dinner. Made with 3 medium potatoes, 2 c. frozen mixed vegetables, 2 beaten eggs, 1/4 tsp. salt and 1 tbsp. fine dry bread crumbs or wheat germ, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook potatoes, covered, in boiling salted water until tender. Drain and mash.
Stir in butter and spoon into a greased 9-inch pie plate.
Spread over bottom and up sides, building up sides with a spoon to form a crust.
Arrange vegetables in bottom of potato crust.
Sprinkle with cheese.
In a small bowl, combine eggs, milk, salt and pepper.
Pour over cheese and sprinkle with bread crumbs or wheat germ.
Bake at 375Β° for 40 to 50 minutes.
