Pepper Jelly
Pepper Jelly is an moderately easy dinner. Made with 3/4 c. bell peppers, 1/4 c. jalapeño, 1 1/2 c. apple cider vinegar, 6 1/2 c. sugar and 1 bottle certo or 2 packets from 1 box, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Remove seeds from peppers and grind, saving the pulp and juice. (A food processor is great for grinding everything for this.) Repeat with jalapeño.
Mix bell peppers, jalapeño, cider vinegar and sugar in a 4 x 6-quart saucepan and bring this to boil. Add Certo and bring to a boil, stirring for 1 minute.
Let stand for a minute. Skim off foam. Add food coloring.
Pour in jelly jars and seal. Good with cream cheese on Ritz crackers.
