Mexican Chicken
Mexican Chicken is an moderately easy dinner. Made with 1 large chicken, 1 can cream of chicken soup, 1 can cream of mushroom soup, 1 can ro-tel tomatoes and 1/2 c. shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat oven to 350°.
Use a casserole dish.
Layer 1/2 bag of chips on bottom of pan.
Remove chicken from bone.
Mix soups and Ro-Tel tomatoes with onion and chicken.
Layer over chips.
Put cheese over mixture and put a layer of chips over soup and chicken mix.
Add more cheese over chips, if desired.
Bake at 350° for 40 minutes.
