German Pancake
German Pancake is a puffed skillet pancake made with eggs, flour, milk, sugar, vanilla, salt, and butter. It bakes in a hot buttered cast-iron skillet until golden, airy at the edges, and tender in the center.

Preheat the oven to 400 F.
Blend the eggs, flour, milk, sugar, vanilla, and salt until smooth.
Smear the inside of a 10-inch cast-iron skillet with the butter.
Pour the batter into the prepared skillet.
Bake 25 to 35 minutes, until puffed and golden brown.
