German Pancake
German Pancake is a puffed oven pancake made from eggs, flour, milk, sugar, vanilla, salt, and plenty of butter in a hot skillet. It rises dramatically in the oven, forming crisp golden edges around a tender custardy center.

Heat the oven to 400 F.
Blend the eggs, flour, milk, sugar, vanilla, and salt until smooth.
Coat the inside of a 10-inch cast-iron skillet with the butter.
Pour the batter into the buttered skillet.
Bake 25 to 35 minutes, until the pancake is puffed, golden brown, and set in the center.
