Depression Soup
Depression Soup is an moderately easy soup you can prepare in just 48 minutes. Made with qt. turkey broth, or 4 c. turkey chunks, large onions, chopped, c. pearl onions and small can tomato paste, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Simmer broth and turkey for 1 hour. Add onions, celery, parsley, salt and pepper.
Simmer 30 minutes or until vegetables are tender.
The next day, add tomato paste and rice to remaining soup.
Simmer 20 minutes.
