Copper Pennies is an moderately easy dinner. Made with 2 lb. carrots, peeled and sliced into 1/4-inch coins, 1/2 c. vegetable oil, 1 c. sugar, 1 large onion, diced and 1 large green pepper, diced, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook carrots until crisp-tender and drain.
Combine remaining ingredients in large bowl; mix well.
Add carrots and stir until well mixed.
Cover and refrigerate 3 to 4 hours.
