Coconut Pie
Coconut Pie is an moderately easy dessert you can prepare in just 56 minutes. Made with margarine, melted, (14 oz.) pkg. flaked coconut, eggs, . cornstarch and c. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Mix together the sugar and cornstarch.
Add the eggs, margarine, 1 3/4 cups coconut, 1 1/4 cups of milk and vanilla. Stir well.
Pour mixture into pie shell(s).
Add additional milk and coconut (sprinkle over and gently mash down into mixture) to finish filling the shell(s) to 3/4-inch from the top.
Bake at 325Β° for 45 minutes or until golden brown.
