Christmas Jam
Christmas Jam is an moderately easy seasonal dish you can prepare in about 1 hour. Made with (11 oz.) pkg. dried apricots, (30 oz.) can pineapple chunks, c. water, (8 oz.) jar maraschino cherries and c. sugar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
In large pan, combine apricots, pineapple and syrup, water and cherry syrup.
Let stand 1 hour, then cook slowly until apricots are tender.
Add sugar; cook slowly, stirring often, until thick (216Β°).
Cut cherries in quarters; add and cook a few minutes longer.
Pour into hot, sterilized jars and seal.
Makes 6 1/2 pints.
