Bean Soup
Bean Soup is an impressive soup you can prepare in about 1 hour 32 minutes. Made with . mixed beans, c. water, c. minced onion, c. minced celery and c. chopped carrots, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Rinse and pick over beans.
Put in a large pot with the water, onions and celery.
Simmer for 2 hours.
Add the remaining ingredients, except the lemon juice and scallions, and simmer, covered, for 1 hour.
Mash or purΓ©e half the soup in a food processor.
Combine with rest of soup.
Season with the lemon juice, salt and pepper.
Serve garnished with the minced scallions.
